For some reason the idea of fava bean paste came into my mind. Yet, plain paste is boring! It needed some spice. Well thank goodness I've got a pantry filled with that. Blending Mediterranean and Indian cuisines to make something surprisingly delicious- life doesn't get better then that.
Ingredients (serves 3)
- 1 cup of dried fava beans
- 3 chopped onions
- 2 cloves of garlic, finely chopped
- 2 tbsp of ground corriander
- 1/4 tsp of turmeric
- 1/2 tsp of paprika
- 2 tbsp of extra virgin olive oil (EVOO)
- 1.5 tbsp of balsamic vinegar
- salt and pepper to taste
Directions
- Soak fava beans in water for about 2 days
- The cook them for about 1 hour or until the skins start cracking open
- Peel the skin (it's pretty tough to chew on)
- Mash or food process the fava beans
- Fry the onions and garlic
- Add in all the spices and blend
- Add in the blended fava beans and fry along with onions
- Add in EVOO and balsamic vinegar
- Adjust for salt and pepper
- Eat immediately or wait till the next day for the flavours to intensify
You might think I'm crazy for adding in the balsamic vinegar, I though it'd be weird too. However, it was actually nice plus any acid is great to help absorb iron from these iron filled beans :D
Another update is the Facebook Page that I've been working on for the blog. With already doing 5 posts per week, I never really finished all my Europe travel stories. I never managed to do a post of Verona, Venice, Rome, Assisi, Pisa, Fluorence, Nice, Carcassone, Barcelona, Zaragoza, and Madrid. Well never fear! DeleteI'm glad the favas worked out for you! I once made them from fresh ones-shelling them, peeling them...so much work...and then I didn't like them because they tasted like peas and I don't like peas. Maybe if I'd cooked them like you with all those spices I'd have liked them!
